Reminds me of how historical American and English dishes would put a whole onion bulb in with the food to cook (for flavor) only for it to be discarded before serving the dish. Unless they fed the discards to livestock I think it contradicts the stereotype that our ancestors were always frugal and used everything. On the other hand, the dishes that survived in written recipes were often dishes of the wealthy.
