I don’t cook much, so when I buy ginger to use in some recipe, you only need to use a little bit of it and the rest sits in my fridge or in the cupboard either getting moldy or completely drying out. I don’t like to use the dried ginger in recipes, but I just don’t know what else to do, since if I buy the fresh ginger it will just go to waste. Does anyone have any recipes or ideas on how to use up a lot of ginger at once?
Peel it, grate it, portion it up into the sort of size you usually use and freeze it in an ice cube tray with a bit of water.
Defrost and squeeze the water out when you need it.
