In a greased, metal baking pan (glass doesn’t crisp up the sides)

Lay down Puff Pastry

Layer of Fried Bacon cut into pieces

Thin layer of diced onions (fried in bacon grease) helps keep things moist + depth of flavour

Whole eggs, enough to cover

Then run a knife through eggs to just slightly break the yolk, then mix it just a little bit.

Whole dry baked egg yolks in B&E pies are a disgusting travesty. ^

Salt and Pepper

A drizzle of milk across the eggs to keep things moist.

Top with Pastry, cut some little vents, brush with egg or milk Add a litle leaf pattern to be fancy.

Bake til it’s cooked, usually ~20-25 mins at like 180 or something.

You want a golden crust, but not too dry/overcooked inside.

Interested to hear what everyone else’s Dad’s B&E pie recipes are.

When I was a kid my mate’s dad made B&E pie and he put heaps of cheese in the bottom and I thought that was a bit questionable.

Also, why do all bakery B&E Pies insist on a whole egg yolk. Do people actually prefer that?
