When making chili I use a combination of roasted fresh chilies and chili powder. I want to use rehydrated dried chilies in place of premade chili powder, but I’m wondering if roasting fresh chilies as well would be redundant? Is there a guide on the differences (if any) of using fresh roasted chilies vs dried chilies (whether rehydrated or ground into a powder)?
